Sole belongs to the Pleuronectidae and Soleidae families. Scientific classification: Solea solea
Sole lives exclusively on sandy and muddy seabeds.
Sole in the Adriatic is fished using wide trawl nets.
It is possible to fish sole throughout the year although they are fished in larger quantities during winter.
Sole has very little fat, and the fats it does contain correspond to the omega-3 category and are therefore very useful for maintaining good health. It can be eaten in any cooked form and is rich in mineral salts.
