The turbot is a type of flatfish, and it belongs the Bothidae family. Scientific classification: Psetta maxima
In the sea around Italy the turbot is a very easy fish to find, but when it is young it also manages to live in salt water lagoons. It copes well with variations in salt levels and eats small fish and crustaceans; its spawning season lasts from March to August.
Turbot meat is extremely easy to digest, low in fat and rich in mineral salts such as phosphorus, iodine, calcium, potassium and magnesium.
